Colourful Summer Greens with Lucy's Lime and Chilli Asian Dressing

Lucy’s Lime and Chilli Asian Dressing

100g frozen or fresh Edamame Beans, blanched and refreshed

1 Large Avocado, sliced

100g Sugar Snap Peas, blanched and refreshed and sliced lengthways

75g Radishes, finely sliced

1 small Cucumber, peeled and chopped

3 Spring Onions, finely sliced

50g Baby Spinach

Large handful of Coriander

Large handful of Mint

2 tbsp Black and White Sesame Seeds

 

METHOD

  1. Place all the ingredients (apart from the sesame seeds) in a large bowl and toss together with a generous amount of Lucy's Lime and Chilli Asian Dressing. Transfer to a shallow bowl and top with the sesame seeds.
