Caesar salad, Anchovies and Eggs with Lucy's Creamy Caesar Dressing

Lucy’s Creamy Caesar Dressing

4 Organic eggs

50g Anchovies

2 Cos or romaine lettuce

Parmesan shavings to serve

 

METHOD

  1. Place the eggs in a saucepan and cover with cold water. Bring to the boil and simmer for 4 minutes. Drain and refresh under cold water. Peel the eggs and cut each into quarters.
  2. Tear the lettuce into large pieces and place in a large bowl . Drizzle over Lucy's Creamy Caesar Dressing and toss together. Place on a large serving plate and top with the eggs, anchovies and parmesan.
