Lucy’s Original French Dressing
1 Packet Merchant Gourmet Quinoa (red and white)
250g Shelled Broad Beans ( fresh or frozen), blanched and peeled
2 small Avocados, peeled and sliced
Bunch of Breakfast Radish, halved lengthways
¼ Tsp Chilli Flakes
Large handful Mint Leaves, roughly chopped
METHOD
- Place the quinoa in a large bowl and toss through a generous amount of Lucy's Original French Dressing. Add the broad beans, avocado, radishes, chilli, half the mint and season with salt and pepper.
- Toss very gently together without breaking the avocado. Transfer to a shallow serving plate and top with the remaining mint.
