Avocado, Broad Bean and Quinoa Salad with Lucy's Original French Dressing

Lucy’s Original French Dressing

1 Packet Merchant Gourmet Quinoa (red and white)

250g Shelled Broad Beans ( fresh or frozen), blanched and peeled

2 small Avocados, peeled and sliced

Bunch of Breakfast Radish, halved lengthways

¼ Tsp Chilli Flakes

Large handful Mint Leaves, roughly chopped

 

METHOD

  1. Place the quinoa in a large bowl and toss through a generous amount of Lucy's Original French Dressing. Add the broad beans, avocado, radishes, chilli, half the mint and season with salt and pepper.
  2. Toss very gently together without breaking the avocado. Transfer to a shallow serving plate and top with the remaining mint.
