INGREDIENTS
230g Boneless Smoked Mackerel Fillets
100g fine Green Beans, blanched for 3 minutes, refreshed and drained well
50g black olives, pitted
4 semi-hard- boiled eggs, peeled and quartered
½ small red onion, finely sliced
1 Gem lettuce, leaves torn into large pieces
50g Rocket
2 tbs extra- virgin olive oil
Lemon and Mustard Mayo
METHOD
- In a salad bowl toss together the green beans, red onion, gem lettuce and rocket with the olive and season. Top with the mackerel, olives and eggs and serve with a large dollop of the mayo.
