Made with just 5 ingredients, this cheesy one tray wonder makes a great midweek meal for the whole family. Bursting with fabulous flavour thanks to Lucy’s Green Pesto Dressing.
200g Tenderstem or Purple sprouting broccoli, blanch and refreshed
300ml Double cream
1. Preheat the oven to 180c / 160c Fan.
2. Bring a large pan of lightly salted water to the boil. Add the gnocchi and cook for 3-4 minutes or until they rise to the surface. Drain.
3. Tip the gnocchi and broccoli into a lightly buttered baking dish and gently mix together. Tear the mozzarella into large pieces then tuck it amongst the gnocchi. Season the cream with black pepper then pour over the gnocchi. Drizzle generously with the pesto dressing and bake for 30 minutes until bubbling.
