Chicken Souvlaki

Lucy’s tantalising fusion twist on a much-loved Greek fakeaway! The zingy and subtly spicy chicken inside this Chicken Souvlaki has been marinated overnight in Lucy’s Lime & Chilli Dressing. Perfectly balanced by cooling taziki, crunchy lettuce, sharp red onion and juicy tomatoes - delicious!



8 boneless, skinless chicken thighs

Lucy’s Lime and Chilli Asian Dressing

Small red onion, finely sliced

Tub ready made taziki 

4 wraps or pitta, toasted

1 butter lettuce

4 large tomatoes, seeded and roughly chopped

Handful mint leaves, roughly chopped

Lemon or lime wedges



 1. Place the chicken thighs in a large bowl and stir in a generous amount of  dressing. Cover and chill for 3 hours or overnight.

2. Heat the grill or BBQ to a  high heat. Thread the chicken onto 4 metal skewers  and cook under the grill or BBQ for 14 minutes turning half way through cooking time until the chicken is cooked. Allow the chicken to rest for 5 minutes.

3.Serve the chicken in the warm flatbreads or pitta with the lettuce, tomato, onion, tzatziki, mint  and serve with lemon or lime wedges.
