½ small Red Onion, finely chopped
2 large Tomatoes, deseeded and finely diced
¼ Cucumber, deseeded and finely diced
Large handful of Mint
Large handful of Flat Leaf Parsley, roughly chopped
Pinch of Chilli Flakes
500g Halloumi, cut into 5 mm slices
1 tbsp Olive Oil
- To make the salsa, place the onion, tomatoes, cucumber, half the herbs and chill in a bowl . Drizzle over a generous amount of dressing and gently mix together.
- Heat the oil in a large frying pan over a medium heat (or cook using BBQ). Fry the halloumi for 1 - 2 minutes on each side until golden and oozing. Place onto a serving dish and top with the salsa and remaining herbs. Serve with the pitta.
